Vegan Pan of Rosemary

What do you do, when there is nothing at home to eat? No rice, almost no vegetable, no quinoa, no fish, just... Nothing? Yes, you're right - someone would just give up and go for a leftover soup. But I said no. I am a cook, so I will cook something! So I took it as a challenge. I was thinking - oh hey! Some potatoes cooked yesterday. And a zucchini, hidden just under them. Oh, and a rest of orange pepper! Guys, I will make something out of this. Hey and look! Half-opened olive oil tuna conserve! I am definitely doing something.

So I did. Guys, you won't believe how GOOD it was. And so healthy, and light! Just ideal lunch.

You need: POTATOES, OLIVE OIL, and vegetable "all you can find"



Ingredients: (1 portion)

  • 3 potatoes
  • half of a pepper
  • half of a zucchini
  • olive oil
  • rosemary
  • pinia nuts
  • fresh parsley
  • tuna (optional)

Instructions:
  1. Heat your pan with a bit of olive oil.
  2. Add the cut zucchini, on a big heat for the first moment, then calm the fire. Let fry for about 1 minute.
  3. Add the pepper and rosemary.
  4. When the vegetable seems to be half-done, you add the cut potatoes and pinia nuts.
  5. Done!! Add the tuna if you want and the parsley.
  6. Yummm...
