Main ingredients: CASHEWS, ALMONDS, DATES, COCONUT OIL, HONEY + COFFEE
and your helper, a FOOD PROCESSOR
Ingredients: (medium sized cheesecake)
- 200g soaked cashews (simply, 1 pack)
- 3-4 tbsp of organic coffee beans (it will be very strong like this, you can add less)
- 2 tbsp of honey
- 2 tsp of coconut oil
- 1 1/2 or 2 cups of almonds
- 2 tsp of cacao powder (unsweetened)
- 13 pitted dates
Instructions:
- First, make your crust. Put the almonds in a food processor to make a huge grain flour. Then add the coconut oil, cacao powder and pitted dates, 1 by 1 at the time, and mix.
- Put your crust into your form and push with your hands and spoon into the bottom. Let it set up in the fridge.
- For the cream - begin with brewing the coffee. It is much better to do it fresh, right before adding it in the cream.
- Put the soaked cashews in the food processor. Mix until smooth and creamy.
- Add the honey and coffee. Mix again.
- Pour the mixture onto the crust with the aid of spatula.
- Let the cheesecake set up in the freezer for about 2 hours, then conserve it in the fridge.
- Top with some fruit and enjoy :)
I promise you it won't last long time in the fridge. And here is an advice - because of the huge amount of coffee, don't eat it at night.
